Tex Mex Hash
Our family favorite Tex Mex Hash is such an easy recipe and goes together in just minutes. This is one of those dishes that you can put together for your family or a group, it is pure Tex Mex comfort. There are busy times when we need a recipe that is filled with flavor and goes together fast. Then, there are also times when our family gathers around the table and we are so grateful to be together and to enjoy a simple dish of comfort in the fellowship of family.

Tex Mex Hash
Miz Helen's Kitchen
Ingredients
11/2 pounds ground chuck
1 yellow onion, chopped
1 green bell pepper, chopped
1 jalapeno, seeded and chopped
1 teaspoon salt
1 teaspoon pepper
2 teaspoons chili powder
1 teaspoon ground cumin
3/4 cup long grain rice
1 (10 ounce) can Tomatoes and Green Chilies (Rol Tel)
4 tablespoons tomato paste
2 cups water
1 cup Mexican Cheese Mix, shredded
Directions
In a skillet, begin to brown the ground chuck.
After the chuck is starting to cook, add the onion, bell pepper, and jalapeno.
Cook until the onions are clear and the chuck is starting to brown.
Add the salt, pepper, chili powder, and cumin. Stir and mix well.
Add the rice, tomatoes and green chilies, and tomato paste. Stir and mix well.
Add the water and stir well.
Cover the skillet and cook on medium low for 5 minutes.
Remove the lid cover and stir the hash.
Cover the skillet again and simmer for 20 minutes or until the rice is tender.
If you are serving from the skillet, just sprinkle the cheese on top while it is still hot. If serving from a serving dish, sprinkle the cheese on top and garnish with green onions.
