Pear & Walnut Coffee Cake
You know there is going to be a special breakfast when you wake up to the smell of a lovely Coffee Cake baking in the oven. This is a delicious recipe and it takes a very short time to put together and have in the oven. It is filled with warm spices and fresh pears nestled in a light and fluffy cake with a nutty crumble topping. Our family loves this coffee cake and it is often times a request from returning house guest.

Pear & Walnut Coffee Cake
Miz Helen's Kitchen
Ingredients
1/4 cup butter, soften
1/2 cup sugar
1 teaspoon vanilla
1 egg
1 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup sour cream
2 cups fresh pear, peeled and diced
Nut Topping
1/2 cup brown sugar
1 teaspoon cinnamon
2 tablespoon butter, soften
3/4 cup walnuts, chopped
whipped cream for garnish
Directions
Cream butter and sugar until light and fluffy.
Beat in vanilla then egg, beating until smooth.
Mix flour, soda, baking powder and salt.
Add to butter mixture alternately with sour cream mixing just to blend after each addition.
Fold in pears.
Spread in a greased 8 inch square baking pan.
Topping
Mix with a fork, the brown sugar, cinnamon and butter until blended.
Add the walnuts.
Sprinkle evenly with the nut mixture.
Bake 40 to 45 minutes at 350 degrees or until the top is well browned.
Remove from oven to a cooling rack.
Let cool for 10 minutes and serve warm.
Garnish with whipped cream.

ReplyDeleteI have not used canned pears, so I couldn't speak to your question. I do however think that if they were very firm that might work, otherwise they may overcook and be a bit mushy upon completion. If you try canned pears be sure and let me know if it works.
