Wilted Greens Salad with Hot Bacon Vinaigrette
When I was a young girl, my Grandmother would take me out to the garden to pick Mustard Greens. We would pick greens in the fall and winter months when it was very chilly or cold outside. Today when I go out to my own garden I remember my Grandmother when she would make the Wilted Greens Salad. I remember washing the greens with her in the cold well water. I would pump the water and my Grandmother would wash the greens. This was one of my favorite salads when I was growing up and I love getting to make this salad for my own Granddaughters.
The Warm Bacon Vinaigrette

Wilted Greens Salad With Hot Bacon Vinaigrette

Ingredients
8 to 10 cups fresh Mustard Greens, chopped
1/2 pound bacon, cut in small pieces
3/4 cup apple cider vinegar
3 tablespoons sugar
1 teaspoon salt
1 teaspoon pepper
1/8 teaspoon cayenne
1/2 teaspoon garlic powder
3/4 cup apple juice
1 small red onion, chopped
Directions
Wash, dry and chop the greens.
Place the greens in a serving bowl.
In a skillet cook the bacon slowly so that the fat renders.
When the bacon is browned, remove it to drain.
Leave the bacon fat in the skillet.
Toss the onions and the bacon with the greens.
Add the vinegar, sugar,salt, pepper, cayenne, garlic powder and apple juice to the skillet.
Bring that mixture to boil.
Pour into a pitcher and quickly pour it over the greens.
The hot vinaigrette will wilt the greens.
Serve immediately.
