Black Eyed Pea Casserole
When I think of a natural paring for Black Eyed Pea's it is usually corn, here in the south those two just go hand in hand. When I was thinking about developing a new recipe for my Black Eyed Pea's for the New Year I wanted it to be a one pot meal that was easy and full of flavor. This Black Eyed Pea Casserole has all the special products that say this is a southern dish that is packed with flavor. The recipe is very easy to put together and is on the table in no time. Of Course Some Corn Bread
It All Goes Into A Baking Dish To Bake Until Golden Brown
Black Eyed Pea Casserole

Ingredients
3 tablespoons olive oil
1 (10 ounce) package Kielbasa Sausage, Chopped Bite Size
1 green bell pepper, chopped
1 jalapeno, seeded and chopped (optional)
1 onion, chopped
1 (15 1/4 ounce) can whole kernel corn, drained
1 (15 1/4 ounce) can Black Eyed Peas with Snaps, drained
1 (15 1/4 ounce) can cream corn
8 ounces sour cream
8 tablespoons cold butter, chopped small pieces
1 (8 1/2 ounce) package of cornbread mix, like Jiffy
Directions
In a hot skillet pour in the olive oil and saute the onions ,bell peppers and jalapenos. When the onions are clear then add the sausage and continue to cook until the sausage is heated through and starting to brown.
Remove from the heat and set aside.
In a large mixing bowl add the whole kernel corn, black eyed peas, and cream corn. Add in the sour cream and butter then mix well.
Add in the cornbread mix and stir until completely mixed.
Salt and Pepper to taste.
Pour into a 9X13 baking dish.
Bake at 375 degrees for 55 to 60 minutes until golden brown on top.
