Pressure Cooker Cajun Chicken
We have family and friends that are from Cajun Country, and through the years we have developed a love for Cajun food. This Pressure Cooker Cajun Chicken is one of the recipes that we love and it is so easy and quick in the pressure cooker. The flavor of the chicken is amazing and makes you think you are sitting at a family table in the middle of Cajun Country. Served over rice it is a complete meal, that will have your family asking for seconds.
Fresh Vegetables Make This A Very Special Dish
In A Very Short Time It Is Ready To Serve
Pressure Cooker Cajun Chicken

Ingredients
2 tablespoons olive oil
3 pounds of bone in chicken pieces
1 (28 ounce) can diced tomatoes with juice
2 medium size onions, chopped
3 cloves garlic, minced
1 green bell pepper, chopped
1 cup celery, chopped
1 tablespoon Cajun Spice Blend (See Recipe Tips)
Directions
In a 6 quart pressure cooker pan, heat the oil.
Brown the chicken, remove and set aside on a separate plate.
When all the pieces have been browned, replace all the chicken into the pan.
Sprinkle 1/2 of the season on top of the chicken pieces.
Add the tomatoes with juice, onions, garlic, bell pepper and celery on top of the chicken.
Add the other half of the season of top of the vegetables.
Place the lid on the cooker and bring it to 15 pounds pressure and
cook 10 minutes.
Let the pressure drop on its own.
Recipe Tips
I use Tony Chachere's Creole Seasoning ( I am not being paid for this mention, I just like the seasoning)
Serve this wonderful dish over hot rice.
