Winter Greens Salad With Orange Vinaigrette
When we begin to transition into the deep cold of winter, nothing is better than a great Winter Greens Salad with some lovely winter fruits and a great vinaigrette. The salad mix that I am using today is really one of my favorites, and although it is a winter mix it is delicious the year round. We still have winter greens in our garden so it is nice to take a brisk walk to the garden and come back with some wonderful fresh greens for a salad. There are so many options to this salad but today I am using a combination of wonderful winter fruits with the greens.
Winter Greens Salad With Orange Vinaigrette
Miz Helen's Kitchen
Ingredients
2 cups fresh baby kale
2 cups fresh mustard greens, chopped small
2 cups fresh baby spinach
1 granny smith apple, peeling on, chopped
2 navel oranges, peeled, sliced and chopped
2 pears, peeled, and sliced
2 cups blueberries
2 cups blackberries
1 cup dried cranberries
1 cup roasted pecans
2 cups Feta Cheese, crumbled
Vinaigrette
1/2 cup orange juice
1/4 cup cider vinegar
2 tablespoons olive oil
2 tablespoons maple syrup
salt and pepper to taste
Directions
Wash and dry the greens and fruit.
Toss all the greens together then very carefully toss the fruit and pecans in with the greens.
Vinaigrette
In a fruit jar with a lid or some other shaker jar, mix the orange juice, cider vinegar, olive oil, maple syrup salt and pepper.
Place the lid on the jar and shake until completely blended.
Pour the Vinaigrette over the salad just before serving.
Last sprinkle the crumbled Feta over the salad.
Enjoy!

ReplyDeleteI love a green salad that is loaded with fruit. I'm a bit jealous that you still have greens in the garden. I tried to snip a few chives from my herb garden a few weeks ago and they broke right of in my hands because they were frozen!
