Lemon Caper Salmon
We live a long way from a stream where wild Salmon are running and wild Salmon are the catch of the day. Most of the Salmon we have is frozen and occasionally we will have fresh Salmon, but it is very expensive. The Salmon that I am using for this recipe today was frozen wild Salmon. I love this recipe with a great marinade of lemons and caper's that goes on top of the fillets to make this flavorful fish. This is a very simple, healthy recipe and for us a very special meal.
This Salmon Is Delicious!
Start With 2 Nice Salmon Fillets
Add The Topping and Lemon Slices
Add A Pad Of Butter On Top
Of Each Lemon Slice
Lemon Caper Salmon

Ingredients
2 medium Salmon fillets
3 tablespoons olive oil
3 tablespoons fresh squeezed lemon juice
2 tablespoons whole grain mustard or Dijon mustard
1/4 cup fresh or dried parsley
4 tablespoons capers,drained
3 Fresh Lemon's For Juice and 6 Slices
2 cloves garlic, minced
1/8 teaspoon cayenne pepper
6 tablespoons butter
Directions
Place the fresh or thawed fillets in a 8 X 8 baking dish
For The Marinade Topping
In a mixing pitcher, add the olive oil, lemon juice, mustard, parsley, capers, garlic, and cayenne pepper.
Whisk the mixture until it is completely mixed.
Spread the mixture evenly on top of the Salmon.
Place 3 lemon slices on top of each fillet.
Place a tablespoon of butter on top of each of the lemon slices.
Cover the baking dish with a plastic wrap and refrigerate for 2 hours.
Let the Salmon sit out of the refrigerator for 30 minutes, remove the plastic wrap then bake.
Bake the Salmon at 350 degrees for 30 minutes.
