Tres Leches Cake has been one of our family favorites for as long as I can remember. Tres Leches is a light sponge cake that has been soaked with a mix of 3 different kinds of milk. I have found through the years that the secret to a great Tres Leches Cake is very moist but not real mushy. This recipe came from my Mother and I have tweaked it to the recipe it is today and one that we just love. 

What a fun week to make meal plans for Cinco de Mayo and Mexican celebrations. We love Mexican food here at the cottage so we really enjoy this week of celebration. I am heading to the barn to check my cold bins which are almost empty this time of the year, then I will be heading to the garden to check out the fresh produce that may be ready. I am pretty sure that we will have some spring onions, Swiss Chard and other fresh veggies in the garden, I really love fresh veggies and so happy that I can include them in our meal plans.

Our family loves this recipe and is a great dish for a meatless meal. Our Green Chili Vegetable Enchiladas are full of Tex Mex flavor and take no time to get them on the table. I have also used the filling for these Enchiladas in a casserole and it is delicious. Once baked these Enchiladas can be frozen for up to 3 months, a great dish of Enchiladas right out of the freezer for a busy day.

I wanted to create a new Tex Mex dessert for some upcoming Mexican themed parties. Of course my official taster is my husband and he says this is his new favorite and I agree, it is delicious. This is a recipe that you can prepare all the ingredients ahead of time then put it together right before you serve. These flavors are amazing with a creamy filling and a crunchy base, to serve one or a crowd.

When I make my meal plans one of the first things I check is the weather, especially in the spring when we have so many storms. We love to cook outdoors but the weather does not always cooperate with our plans. This week looks like I will have to bring my grilling indoors for just a little longer. Sometimes I notice folks walking up and down the supermarket isles saying Whats For Dinner, I hope that is not you and we can inspire you somehow to start making meal plans.

We are so excited to see you today for Full Plate Thursday! We have had freezing temperatures one day and the next may be a beautiful spring day. I am a seasonal cook so one day it is a nice soup for a cold rainy day and the next is a wonderful salad that just says spring. I know that some of you are still having snow as we are starting our party. Some years ago we had house guest just about every weekend during the water sport season. When you live at the lake folks just love to come see you. Although we had plenty of space for sleeping, I found we needed a special space for the weekenders to have a space for their personal items that would be out of the way. That's when I had the idea of the chest and a different drawer for each person. I started with a raw wood chest and the project had it's own life  after that. It was such a rewarding project that is still enjoyed to this day. 

I was walking from the garden to the house the other day with handful of fresh carrots that I had just pulled from the garden and I thought about my Aunt and her love of carrots. She loved carrots and made the most delicious Carrot Cake so I decided to make an updated version of my Aunts Carrot Cake. Our family loves this cake and it never last very long. This recipe is very rich and moist with great flavors.

I am just coming in from the garden with some fresh greens and can't wait to make my meal plan for next week. We love fresh fruits and vegetables and always try to include them in our meal plan to give us a healthy balance in our diet. We have had some lovely spring weather this past week and have really enjoyed our time outdoors in the garden and sitting on the screen porch once again after our long winter. I think we will just sit right here on the porch while we make this meal plan and have a cup of tea.

I love to have a go to casserole that I can put together in no time and it taste like you have been slow cooking it all day, this is definitely one of those casseroles. I keep 3 cup bags of cooked chicken in the freezer for salads, soups and casseroles, it really does speed the prep time along. This casserole has fresh broccoli with a great Alfredo sauce giving this recipe a delicious flavor!

The asparagus is wonderful right now and when we add some fresh peas to the mix it is a winner every time. I love the fresh vegetable combination with the rice and the flavorful cheese sauce that makes this casserole a great side dish. I have served this casserole with a nice salad for a luncheon and it was delicious. This is a great garden to table casserole that is packed with flavor.

It is so nice to sit on the screen porch and make this meal plan for next week. It has been raining just a little and everything looks so fresh.  Our garden looks great and we are already getting some awesome fresh vegetables. We will have a busy week coming up so I will be looking at that plus the weather. It looks like the weather will be clearing for the cook out we are planning for next Saturday, so happy to be having some special friends over for a the evening.

I love a cake recipe that is light and can be paired with some mixed berries and that is exactly what this cake is. This is a simple recipe that is very smooth and delicious garnished with fresh fruit. I have made this cake for ladies luncheons, and family dinners, it is a great recipe that we really enjoy!

This Chicken Tetrazzini was and still is today a family favorite at the cottage. It is a great dish that is layered with flavor. It is easy to put together and freezes well for a later warm up. I asked my son the other day what he wanted me to make for him when he came to see us and he said "that Chicken Tetrazzini", and of course I made it for him, and this one is just for YOU!
