Asparagus & Pea Salad
When the vegetables are plentiful in the garden and at the Farmers Markets it is time to make some wonderful fresh salads. One of my favorite garden to table salads is this delicious Asparagus & Pea salad. This salad is a great side for any meal or would be a fantastic salad for a luncheon. This is a very special salad with a flavorful Lemon Dressing.

Asparagus & Pea Salad

Ingredients
Serves 4
4 cups salad greens, chopped small
2 cups fresh or frozen peas
4 cups fresh asparagus, chopped
3 cups cucumber, seeded and chopped
3 to 4 cups radishes, sliced thin
juice from 1 lemon plus slices
2 sprigs fresh dill
Dressing
1/2 cup fresh lemon juice
1/2 cup olive oil
6 tablespoons honey
6 tablespoons fresh dill, chopped
1 teaspoon salt
1 teaspoon pepper
Directions
Prepare the salad greens then refrigerate the plate with the greens.
In a steamer, prepare the steamer water according to your steamer directions and add a lemon sliced and 2 sprigs of dill to the steaming water.
Steam the asparagus and peas until just tender, but still crisp.
Chill the asparagus and peas in the refrigerator for about 30 minutes.
After the asparagus and peas are chilled, then mix them together in a very large mixing bowl.
Add the cucumber's and radishes.
For the Dressing, in a large fruit jar or a mixing jar, add the lemon juice, olive oil, honey, dill, salt and pepper.
Shake the Dressing until it is completely blended and mixed well.
Drizzle the Dressing over the salad and arrange on the chopped salad greens that are chilled.
Serve immediately.

I love fresh peas!! I grew them once. When I was working in the garden I found our young daughter sitting by the peas, eating away!! She loved them raw. Thanks for sharing at the What's for Dinner party!
