Slow Cooker Chicken Cacciatore

Ingredients
1 tablespoon olive oil
6 boneless, skinless chicken breast
4 cloves garlic, minced
2 teaspoons oregano
1 teaspoon basil
1 teaspoon salt
1 teaspoon pepper
pinch pepper flakes
1 (28 ounce) can crushed tomatoes in puree
5 cups mushrooms, sliced
2 cups onions, chopped
1 green bell pepper, sliced
2 cups Chicken broth
1/4 cup cornstarch
16 ounces fettuccine or spaghetti, cooked and drained
Directions
In a heavy skillet, heat the olive oil and brown the chicken on all sides.
Place the chicken in a pre-heated 6 quart slow cooker.
In a mixing bowl mix together, the garlic, tomatoes, mushrooms, onions, and bell pepper. Stir in the oregano, basil, salt, pepper and pepper flakes.
Place the vegetable mixture on top of the chicken.
Pour 1-1/2 cups of the Chicken Broth around the sides of the chicken and vegetables.
Cover and cook on low for 7 to 8 hours or high for 4 to 5 hours.
Remove the chicken from the cooker and keep warm.
In a small bowl, mix the remaining 1/2 cup of chicken broth with 1/4 cup cornstarch, mix until smooth.
Stir the cornstarch mixture into the remaining vegetables in the cooker.
Cover and cook on high for 10 minutes.
Cook the pasta according to directions.
Serve the chicken and vegetables with the pasta.
