Slow Cooker BBQ Pineapple Sausage
If it is a slow cooker day this recipe is a real winner here at the cottage. The smoked sausage in combination with the pineapple,other vegetables and sauce is cooked slowly, blending the flavors to a delicious finish. This recipe is quick and easy to put together and is ready in only 4 to 6 hours. When you walk in the door the smell of this recipe will bring you into the kitchen in search of the awesome dish that is coming, well that's what my husband did. When he walked in the door he came into the kitchen saying, what is that it smells so good, when do we eat?

We Start With A Seared Smoked Sausage
(Yes, I Like To Have Some Of The Smoky Char On Some Of The Sausage)

Slow Cooker BBQ Pineapple Sausage

Ingredients
2 pounds smoked sausage, large slice
1 green bell pepper, large chop
1 red bell pepper, large chop
2 red onions, large chop
2 (20 ounce) cans of pineapple chunks, reserve the liquid
The Sauce
2 cups of the reserved liquid from the pineapple chunks.
2 cups dark brown sugar
1 cup ketchup
1/2 cup apple cider vinegar
1/2 teaspoon hot sauce
3 tablespoons ginger, minced
4 cloves garlic, minced
1 cup of BBQ sauce of your choice
1/2 cup corn starch
Directions
In a very hot skillet sear the smoked sausage.
Add the seared sausage to a 6 quart slow cooker.
Add the green and red bell pepper, red onion and pineapple chunks.
In a mixing pitcher, whisk the liquid from the pineapple chunks, brown sugar, ketchup, vinegar, hot sauce, ginger, garlic, and BBQ sauce, mix well.
Pour the liquid over the top of the layer of vegetables and pineapple chunks.
Place the lid on the cooker and cook on high for 4 hours or low for 6 hours.
When the cooking time expires, remove 1 cup of the liquid to a mixing pitcher and add the corn starch to mix a slurry.
Add the corn starch mix to the sausage, vegetables and pineapple chunks, stir well and the sauce will thicken.
We like to serve the BBQ on rice.
