Melon Salad with Basil Dressing
We really enjoy our melon's in the summer time. There is nothing better than a Black Diamond Watermelon form central Texas or a Cantaloupe from the valley of Texas. Both of these melons are delicious all on their own but they make a great dish when mixed together. Our Basil made from the fresh Basil in our herb garden make this Melon Salad a very special side dish for any meal.
Starting The Dressing With
Fresh Basil
Add The Dressing Ingredients
Next We Pour The Delicious Dressing Over The
Chopped Melon
Chill Then Sprinkle With Feta

Melon Salad with Basil Dressing
Miz Helen's Kitchen
Ingredients
6 cups cantaloupe, chopped
6 cups watermelon, chopped
For The Dressing
2 cups fresh sweet basil
1/2 cup vegetable oil
1/2 cup apple cider vinegar
6 tablespoons balsamic vinegar
3/4 cup honey
1-1/2 teaspoon salt
1 teaspoon pepper
dash Tabasco
Garnish
1 cup Feta Cheese
Fresh Basil Leaves
Directions
In a food processor, pour the vegetable oil, apple cider vinegar, balsamic vinegar,honey, salt and pepper. Blend the mix until thick and creamy.
Add the basil and blend until it is in very small pieces.
Taste and adjust your seasons to your taste.
Pour the dressing over the melon and toss to cover the melon all over.
Chill the melon and right before serving toss with Feta Cheese Crumbles.
Enjoy!

I happen to have both a watermelon and a cantaloupe from our csa right now. I would have never thought to dress them like this but it sounds amazing!
