Slow Cooker Green Chili Taco Filling
I love my Slow Cooker and the freedom it gives me to fill it full of goodness and walk away while it works its magic. This Taco Filling is a great recipe to make for a Taco Buffet, for the big game day, for a family supper or for the freezer. I have a bag of this filling in my freezer all the time for those times when we need a little extra help for a busy day. This recipe is filled with a great Tex Mex flavor and is a hearty filling for any Taco, topping for a Burrito, Tostada or added to a Queso, it is a winner every time!

Slow Cooker Green Chili Taco Filling

Ingredients
2 pounds ground chuck
1 medium yellow onion, chopped
3 cloves garlic, minced
3 cloves garlic, minced
1 small red bell pepper, chopped
1 small jalapeno, seeded, chopped
2 cups green chilies,chopped
2-1/2 cups tomato sauce
1/3 cup water
2 teaspoons salt
1 teaspoon black pepper
2 teaspoons chili powder
2 teaspoons paprika
1 teaspoon oregano
1 tablespoon cumin
Directions
Brown the ground chuck in a large hot skillet. Add the onion, garlic, bell pepper and jalapeno. Cook until the onions are clear.
Add the meat and vegetable mixture to the slow cooker.
Add the green chilies and tomato sauce, and water then mix well.
Add the salt, pepper, chili powder, paprika, oregano, and cumin then mix well.
Place the lid on the cooker and cook for 3 hours on high or 6 hours on low.
I use 1/4 cup of the filling for a taco.
Enjoy!
