Cranberry Jelly
We can and preserve much of the harvest from our garden every year and we love to share those products with our friends and family. Through the years we have shared an abundant garden harvest and it gives us much joy to do so. Every year we like to make a very special canned good to share at Christmas with friends and family. This year we have made this beautiful Cranberry Jelly. What could be better at Christmas than a nice jar of Cranberry Jelly. This Jelly is delicious and can be paired with meats, poultry, and great with vegetables. We have been enjoying it with our sour dough bread and toasted bagels. It is a great jelly and providing we have some left by Christmas, we will be sharing a jar or two.
Cranberry Jelly
Miz Helen's Kitchen
Ingredients
3-1/2 cups cranberry juice cocktail
1 (1&3/4 ounce) package powdered fruit pectin
4 cups sugar
1/4 cup lemon juice
Directions
In a 10 quart sauce pan or heavy Dutch oven combine cranberry juice and pectin.
Bring to full rolling boil.
Stir in sugar.
Bring again to full rolling boil.
Boil hard, uncovered for 1 minute, stirring constantly.
Remove from heat.
Stir in lemon juice.
Quickly skim off foam with metal spoon.
Pour at once into hot sterilized jars and seal.
Makes 6 half-pints.

ReplyDeleteDo you think this could be modified to use the low sugar pectin? Do you have a guess how much sugar would be used? It sure makes a beautiful jelly. We enjoy cranberry anything and everything!
