Green Pea and Ham Couscous Salad
This is a great recipe to use up some left over ham and enjoy some green peas and couscous. Our Green Pea and Ham Couscous Salad is perfect for a luncheon, covered dish event or a family get together. The salad is really better if you make it ahead of time and let it sit overnight if possible or as long as you can before serving. The combination of flavor in this salad makes it very special and one that your guest will ask for over and over. We love this salad here at the cottage and through the years it has become one of those go to recipes.

Green Pea and Ham Couscous Salad
Miz Helen's Kitchen
Ingredients
3 cups cooked couscous
2 cups chopped ham
1 medium green bell pepper, chopped
1 medium red bell pepper, chopped
1 cup red onion, chopped
3 cups American cheese, cubed into bite size
4 cups fresh or frozen green peas
The Dressing
1-1/2 cups mayonnaise or (Miracle Whip)
1/2 cup sour cream
1/4 cup apple cider vinegar
4 tablespoons sugar
2 teaspoons salt
1 teaspoon pepper
1 teaspoon dried basil
1 teaspoon dried parsley
1/8 teaspoon cayenne pepper
Garnish With fresh mint
Directions
In a very large mixing bowl, mix together the couscous,ham,bell peppers,red onion,cheese cubes, and green peas.
Into a mixing pitcher mix together the mayonnaise, sour cream, cider vinegar, sugar, salt, pepper, basil, parsley, and cayenne pepper.
Pour the dressing over the couscous and ham mixture and mix well.
Garnish with fresh mint.
Refrigerate for at least 3 hours and it is better over night.
Recipe Tip:
Place your fresh or frozen peas at the bottom of a colander and drain the couscous on top of the peas. The hot couscous water and the hot couscous will thaw the peas or cook the fresh peas just enough. Then just stir together.

I have never tried any sort of couscous salad; I'm always a bit afraid that cold couscous would taste weird as we're so used to eating it hot. I'll have to give it a try!
