Salsa Chicken Skillet
Salsa Chicken Skillet is one of those recipes that goes together in no time and your family can be enjoying the meal on a very busy day. The chicken has a very special rub that gives it lots of Tex Mex flavors. After cooking, it simmers with some salsa and cheese, to top off a great recipe. Just add some lime and cilantro with a sliced avocado and this is a plate full of goodness. I have added one of my favorite rice casserole recipes to the meal that really compliments the chicken.

Ingredients
The Rub
2 teaspoons cumin
1 scant teaspoon chili powder
1 teaspoon oregano
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon cayenne pepper
The Chicken
4 Chicken Breast, boneless and skinless
1/4 cup olive oil
4 slices Pepper Jack Cheese
8 tablespoons salsa
Juice of 1 lime
Garnish
1 lime sliced
Fresh Cilantro
Avocado, sliced
Directions
In a small bowl, mix together the cumin, chili powder, oregano, garlic powder, salt, and peppers.
Rub the chicken on all sides with the rub.
Heat 1/4 cup of olive oil in a heavy skillet and when the oil is hot, place the rubbed chicken breast into the hot oil. Cook on a medium heat for about 3 to 4 minutes on each side. Keep turning the chicken so it doesn't get to dark on one side.
When the chicken is cooked through place cheese on top of each breast.
Spoon salsa on top of each of the chicken breast topped with cheese.
Cover the skillet and place the heat on low simmer.
Leave on this heat until the cheese is completely melted. and leave covered until ready to serve.
Squeeze the juice of 1 lime over the chicken.
Garnish with lime, fresh cilantro and sliced avocado.
