Garden Fresh Fritatta at Miz Helen's Country Cottage

It is so nice to  be able to have a really nice brunch dish on the weekend when we can just take our time to really enjoy some time together with friends and family. This Garden Fresh Fritatta is a great recipe that takes you from the garden to the table with lots of fresh vegetables. I love to invite our guest to come to the garden and help harvest some of the ingredients for the dish that we are about to make, we have so much fun. The combination of flavor in this recipe is really delicious and is so fresh. For the off season when the garden is no longer producing most of these vegetables can be found at your local farmers market of your supermarket. I often times make this recipe and freeze it in individual servings for up to two months, it is a great grab and go breakfast!

Garden Fresh Fritatta

Ingredients
12 eggs, slightly beaten
1 cup half and half
1 pound country sausage, cooked
4 cups cherry tomatoes, cut in half
1 medium Zucchini Squash, chopped
1 small red onion, chopped
3 cloves garlic, minced
1 medium green bell pepper
4 cups spinach, chopped
1 teaspoon salt
1 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 teaspoon fresh or dried thyme
2 cups Gruyere Cheese, shredded
2 tablespoons butter
Directions
In a medium skillet brown the country sausage.
In a large mixing bowl beat 12 eggs with 1 cup half and half.
Add the tomatoes, Zucchini Squash, red onion, garlic, green bell pepper, spinach, salt, pepper, cayenne pepper, thyme, and Gruyere Cheese.
Add the cooked sausage.
Mix all the ingredients well.
Butter a 9 X 13 baking dish, then pour the egg and vegetables into the buttered baking dish.
Bake at 350 degrees for 45 to 60 minutes or until the center is set.
Remove from the heat to a cooling rack. Let cool for 10 minutes before serving.
Recipe Tip:
The recipe after cooking can be frozen into individual servings for up to 2 months.
