Nana's Lemon Pie
Through my many years of cooking I have acquired several go to recipes for special occasions. Nana's Lemon Pie is just one of those recipes, when you get a call and one of the kids has invited 2 or 3 of their buddies home for dinner, or maybe the hubby is bringing one of his office buddies for dinner. This is the greatest go to pie recipe.This recipe has amazing flavor and it very easy to put together and it serves up like you have been working on a dessert all day!
A Great Pie Always Starts With A Great Crust
All The Ingredients For This Pie Go Into
The Food Processor
Starting With One Lemon
Pour In The Remaining Ingredients and Blend
Pour Into The Pie Crust Then Bake
Out Of The Oven To Cool
Serve It Plain With Garnish
Or
Serve It With Topping
Nana's Lemon Pie

Ingredients
1/2 cup butter, melted and cooled
1-9 inch pie crust
1 whole lemon, seeded and diced, do not peel
4 eggs
1-1/2 cups sugar
1 teaspoon vanilla
powdered sugar and fruit for garnish
Directions
Melt 1/2 cup butter and set aside to cool.
Prepare a 9 inch pie crust of your choice and place it into a 9 inch pie plate.
Dice a nice size lemon and remove the seeds, do not peel the lemon.
Place the diced lemon into the food processor.
Pour the melted cooled butter into the food processor.
Add the eggs, sugar and vanilla into the food processor.
Blend the mixture until thick.
Pour the pie filling into the prepared pie crust.
Place in a 350 degree oven and bake for 40 minutes or until set in the center.
Remove the pie from the oven and let cool to room temperature.
Chill for 2 hours (if possible).
Garnish with powdered, and the fruit of your choice.
Keep refrigerated after serving, (if you have any left).
Enjoy!

ReplyDeleteI( made this lemon pie yesterday and it was amazing! I served ours with fresh cut up strawberries - so good! The filling was like lemon curd and wasn't too sweet nor too puckery. Absolutely perfect - I will be making it again soon!
