Retro Macaroni Salad
The first time I remember making this salad was in my homemaking class, back in the day when we still had homemaking classes in our school system. I am still making the salad and still serving it in my Covered Pyrex Dish. It is a delicious salad and has gone to many a picnic, and covered dish dinner. When our family gets together it is always one of the favorites, truly a classic comfort salad!
First We Chop The Fresh Vegetables
In A Large Mixing Bowl Add
The Cooked Macaroni
Add The Dressing And The Cheese
Retro Macaroni Salad

Ingredients
4 cups cooked macaroni
1 red onion, chopped
4 cups celery, chopped
1 bell pepper, red or green, chopped
1 cup pimento, chopped
1 cup mayonnaise
2/3 cup sugar
4 tablespoon vinegar
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon cayenne pepper
3 cups sharp cheddar cheese, chopped
Fresh Parsley for Garnish
Directions
Cook the macaroni according to package directions, rinse and cool.
In a large mixing bowl stir together the macaroni, onion, celery, bell pepper, and pimento, mix well.
In a mixing pitcher, mix together the mayonnaise, sugar, vinegar, salt, pepper and cayenne pepper.
Pour the mayonnaise mixture over the pasta mixture and mix well.
Add the cheese and mix well.
Garnish with fresh parsley.
Recipe Tip:
Always refrigerate the salad before and after serving.

I love macaroni salad and I love classic recipes. I am an old bird and I have been cooking for many years. I do wish they still taught home economics in the schools. It may not have been everyone's cup of tea, but a lot of good things were taught in the classes.
ReplyDeleteI think they need Home Ec classes back in school also. My youngest granddaughter isn't too knowledgeable or that interested about cooking. That is where my interest in cooking and sewing began.
DeleteThis is very similar to the one my mom taught me how to make. We don't put in everything you do, and we add chopped sweet pickles - we also add the cheese. I've never known anyone else to put in the cheese, so interesting to see that you have it! It is my favorite. Yum, I will have to make it soon!

We are really dating ourselves having attended Home Ec. It was, of course, one of my favorite classes.
