Pumpkin Blondie's
My Pumpkin Blondie's are a very special treat. This could easily be a snack cake, it is so moist and the flavors of pumpkin and special spices make this a great recipe. I made this batch of Blondie's for a committee meeting and did not have a single one left, they really are that good. So if you are serving them for a function be sure and put one back for yourself, you may not have enough.

Bake and Take A Deep Breath, It Smells So Good
Test The Center With A Silver Knife
Making Sure It Is Done
Cool On A Cooling Rack
Drizzle With White Chocolate
Pumpkin Blondie's
Miz Helen's Kitchen
Ingredients
4 eggs
2 cups sugar
1 cup butter, melted and cooled
1 (15 ounce) can pure pumpkin
1 teaspoon vanilla
1-1/2 cup all-purpose flour
2 teaspoons pumpkin pie spice
1 teaspoon cinnamon
Baking flour and oil spray
2 cups white chocolate morsels
Directions
In a electric mixing bowl, add the eggs and beat well.
While the mixer is running add the sugar, cooled butter, pumpkin and vanilla, then beat until the mixture is completely blended.
In a mixing bowl add the flour, pumpkin pie spice and cinnamon then mix well.
Add the flour and spice mixture to the pumpkin mixture and mix well.
Spray a 8X11 baking pan
Add the batter to the prepared pan and bake at 350 degrees for 1 hour.
Check the center of the Blondie's to make sure it is done.
Remove to a cooling rack.
Melt the chocolate in a double boiler or in the micro wave.
If using the micro wave, place the chocolate in a micro wave safe bowl.
Cook on 45 seconds and then stir. Repeat this process until the chocolate is melted.
Drizzle the melted chocolate over the Blondie's when they are completely cooled.
