Tex Mex Breakfast Skillet
Tex Mex Breakfast Skillet is a perfect skillet full of Tex Mex flavor that will satisfy any breakfast or brunch lover. We often times have a late breakfast or brunch on the weekends especially when we have guest. This skillet has a great potato base, with Tex Mex spice, some eggs, tortilla's and it's delicious! This is a recipe that goes in one skillet and everyone needs to get to the table because it sure won't take long before it is served.
Start With A Great Potato and Peppers Base
Add The Eggs
Layer On The Cheese
Top With Tortilla Chips
Garnish With Salsa and Sour Cream

Ingredients
2 tablespoons olive oil
3 tablespoons butter
3 cups hash browns, frozen with onions and peppers
5 eggs, beaten
1/4 cup heavy cream
2 teaspoons salt
1 teaspoon pepper
1/2 teaspoon cayenne pepper
1 cup Mexican blend cheese, shredded
1 cup tortilla chips, crushed large
Garnish with Salsa to taste , Sour Cream to taste, fresh cilantro or parsley
to taste
Directions
Heat the oil in a very large heavy skillet. Pour the hash browns into the hot oil.
Spread the hash browns out evenly over the bottom of the skillet.
Cover the skillet and cook on medium, stir occasionally, and cook until golden brown.
In a mixing pitcher, whisk eggs, cream, salt, pepper, and cayenne pepper.
Make a well in the middle of the hash browns and drop in the butter.
After the butter has melted pour the egg mixture over the the hash browns. Continue to cook on medium stirring to lift the eggs up until they reach a soft scramble.
Sprinkle the cheese on top of the eggs and hash browns.
Remove from heat and cover the skillet, leave cover on until the cheese has melted.
Garnish with tortilla chips,salsa, Sour Cream, fresh cilantro or parsley.
Serve immediately.
