Instant Pot Mississippi Pot Roast
Mississippi Pot Roast is a flavor filled roast that has been in my recipe box more than a few years. The Instant Pot has made it possible to have that roast in a much shorter time. I changed my original recipe just a bit to make it even better in the Instant Pot if that was even possible, which I found out it was. Be sure and check out my recipe to see what has been changed, that made it even better.
Instant Pot Mississippi Pot Roast
We start the recipe by cutting the chuck roast into 4 equal parts, then we are going to season it on all sides and sear it in some oil in the Instant Pot.
By now this roast is beginning to smell so good.When my Grandmother was cooking and something smelled real good she would say, "you can smell all that goodness in the pot "!
Next We Are Adding
Ranch Dressing Mix, Beef Broth,
French Onion Soup
A Stick Of Real Butter

Instant Pot Mississippi Pot Roast

Ingredients
1- 31/2 pound chuck roast
2 tablespoons vegetable oil
2 teaspoons salt
1 teaspoon pepper
1 (package) Ranch Dressing Dry Mix
1 (10-1/2 ounce) can French Onion Soup
1/2 beef broth
1/2 teaspoon Tabasco Sauce
1 stick real butter
8 to 10 pieces Pepperoncinis
1/2 cup Pepperoncinis Juice
Directions
In a mixing pitcher mix together the French Onion Soup, Pepperoncinis Juice and Tabasco Sauce, then set aside.
Salt and pepper the meat on all sides.
Cut the chuck roast into 4 lengthwise strips.
Turn the Instant Pot pressure cooker on and set it to saute mode.
Add the vegetable oil and brown the meat until browned on all sides.
Remove the beef to a platter and set aside.
Add the beef broth and deglaze the pot by scraping the bottom of the pot.
Place the meat back in the pot.
Sprinkle the Ranch Dressing on top of the roast.
Place the stick of butter on top of the Ranch Dressing and roast.
Place 8 Pepperoncinis on top of the roast.
Pour the Pepperoncinis Juice,Tabasco and the French Onion Soup Mix around the edge of the roast.
Set the pressure cooker to cook manually for 90 minutes.
Once the cooking is done, let it naturally depressurize which takes about 15 to 20 minutes.
The meat is ready to slice or shred, then serve.

I really really like the idea of adding in the Pepperoncinis to this dish (and their juice). That's gotta be a new level. At some point, I do have to get an Instant Pot - probably not until this summer, however. Another recipe to bookmark.

DeleteI just love cooking in my Instant Pot, it took me a long time to make a decision about having one and then my daughter just gave me one as a gift. Mine is a Instant Pot IP Lux, it has a slow cooker, rice and several other settings. It is a great appliance and takes the place of serveral others, I just love it!
