Orange Cranberry Bread
The combination of orange and cranberry is one of my favorites and I love being able to use that combination in this awesome Orange Cranberry Bread recipe. We love a nice fruit bread for our coffee break and it is perfect for afternoon tea. I really enjoy making this recipe during fresh cranberry season although it can be made the year round with frozen cranberries. This recipe will make 1 large loaf or 3 small loaves, you may want to share an extra loaf with a friend.
Making The Orange Cranberry Bread
Prepare The Juice, and Cranberries
Fold Into The Batter
Pour Into Prepared Pans and Bake
Let Completely Cool Before Slicing
Orange Cranberry Bread

Ingredients
1 cup fresh cranberries, medium chop
3 tablespoons orange zest
1/2 cup sugar
2 cups all purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup vegetable oil
1/2 cup orange juice
2 large eggs
Directions
In a medium bowl mix together the chopped cranberries, orange zest, 1/2 cup sugar and set aside.
In a electric mixing bowl mix the flour, 1/2 cup sugar, baking powder, and salt.
In a mixing pitcher mix the vegetable oil, orange juice and eggs until mixed well.
Add the liquid mix into the flour mix , beat with the electric mixer until mixed well. Don't forget to scrape the sides of the bowl to get a really good mix.
Very carefully fold in the cranberry mixture.
Spray the loaf pans with the flour and oil spray for baking.
Pour the batter into the pan or pans.
For the small (5 X 3 X 2 in.) loaf pans
Bake at 375 degrees for 30 to 35 minutes or until lightly browned and the center test clean.
For the large (9X5 in. ) loaf pan
Bake at 375 degrees for 45 to 50 minutes or until lightly browned and the center test clean.

I always freeze extra bags of cranberries for recipes to make for the rest of the year. Cranberry bread is one of my favorites.

ReplyDeleteThis looks delicious; I made a cranberry bread but I think we used lemon with it not orange... I think I'd really like the orange/ cranberry combo better. Pinned.
