Chicken Noodle Casserole
I was asked last week to bring a casserole to a family in our comminity who were just having a really hard time in life right now. As I was making this Chicken Noodle Casserole for them I was thinking about so many of you who may be having a really hard time in life right now and could just use a special touch or a little extra love. This is one of those casseroles that will bring a lot of comfort with homemade style noodles, nice size bites of chicken breast and some amazing vegetables to assemble a great dish filled with flavor. If you lived close to me this one would be for you!

We Are Going To Start This Casserole With
Delicious Chicken Breast
Next We Add The Noodles
Last Mix In The Vegetables and Liquid
Mix Together and Pour Into A Baking Dish
Sprinkle The Topping On Top and Bake

Ingredients
Serves 10 to 12
4 cups cooked chicken breast, chopped
3 cups chicken broth
1 (16 ounce) bag homemade noodles
3 cups frozen peas and carrots
1 (10 ounce) can cream of celery soup
1 (10 ounce) can cream of chicken soup
1 cup half and half
3/4 cup of the chicken broth
1 teaspoon salt
1 teaspoon pepper
2 teaspoons poultry season
1 teaspoon thyme leave
1 cup sharp cheddar cheese,shredded
2 cups Panko Crumbs
Cooking Spray
Directions
In a large stock pot pour the chicken broth into the pot and bring to a boil,
Place the noodles into the boiling chicken broth.
Cook the noodles for 8 minutes then drain, retaining 3/4 cup of the broth.
Place the cooked noodles into a very large mixing bowl.
Place the chopped chicken breast on top of the noodles.
Add the peas and carrots to the mix.
In a mixing pitcher, mix together the celery soup, chicken soup, half and half, and broth.
Add the salt, pepper, poultry season, and thyme leaves. to the liquid and mix well.
Pour the liquid mix over the chicken and noodle mix.
Stir in the shredded cheese.
Spray a 9 X 13 baking dish.
Pour the chicken noodle mix into the baking dish.
Sprinkle the Panko Crumbs on top of the mix.
Place the baking dish into a 350 degree oven and bake for 30 to 40 minutes until cooked through.
Remove the baking dish from the oven and cool for 10 minutes before serving.

ReplyDeleteAlthough I have not prepared it and left it in the refrigerator until the next day, I have had left overs from the casserole, covered the left overs in a container and warmed them in the micro wave and they were fine.
