I love going to the garden for a fresh cabbage to use in this recipe, making it a great garden to table delight. We are an Irish family with lots of family favorites, but this is a great go to recipe that our family loves!
How To Make Irish Banger Skillet
Start With Searing The Bangers
If You Can't Find Real Bangers At Your Market
You Can Use Smoked Sausage Links
Prepare The Garden Vegetables
After Removing The Links From The Skillet
Saute The Onions, and Carrots
Then The Fresh Chopped Cabbage
Add The Links Back To The Skillet
Continue To Cook
Irish Banger Skillet

Ingredients
1 pound Irish Banger's or Smoked Sausage Links
2 tablespoons vegetable oil
2 pounds tiny red potatoes, sliced
2 medium onions, sliced
3 cups carrots, chopped
2 cups chicken broth
5 cups fresh cabbage, chopped
1 teaspoon salt
1 teaspoon pepper
2 teaspoons dried thyme leaves
Directions
Cut the bangers or links into short links.
Place in a very hot heavy 12 inch skillet and quickly sear the links.
When the links are seared remove the links to a holding plate.
Pour the vegetable oil into the hot skillet and saute the potatoes, onions, and carrots.
Pour in the chicken broth and scrap the bottom of the pan, getting all the goodness from the bottom of the pan.
Add the cabbage to the skillet, stir in the salt, pepper, and thyme leaves then place the lid on the vegetable mix.
Cook on medium low heat for about 8 minutes until the cabbage is wilted and just tender.
Remove the lid and stir the mix well. Place the links on top of the vegetable mix and replace the lid.
Cook on low for 10 minutes. Remove the lid and serve hot.
