Strawberry Skillet Cake
Our Strawberry Skillet Cake is just like the one that my Mother made when I was a young girl. I just took her basic recipe and dressed it up a little to make it a delicious dessert that can be a dessert for a casual family dinner or a dinner party for friends. Strawberries say spring and summer fresh, although today we are fortunate to be able to get strawberries most of the year round. We love this dessert and hope you will enjoy it with your friends and family. To honor my Mother I am using her old black iron skillet that I got after she passed away, of course I treasure that skillet.
How To Make Strawberry Skillet Cake
We Will Start The Recipe With A Creamy Rich Batter
That Batter Is Then Poured Into
A Black Iron Skillet
Next Sprinkle A Topping Over The Batter
Place Slices Berries On Top Of The Topping
Into The Oven and Bake Then Cool Before Slicing
Strawberry Skillet Cake

Ingredients
1/4 cup butter,room temperature
1/2 cup shortening, (I use butter flavored shortening)
1 cup plus 2 tablespoons sugar
2 eggs, room temperature
2-1/2 cups all-purpose flour
2-1/2 teaspoons baking powder
dash salt
3/4 cup half & half
1 teaspoon vanilla
Topping
1/2 cup butter,softened
3/4 cup all-purpose flour
1/2 cup sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
Garnish
sliced fresh strawberries
Whipped cream or Whipped Topping
Directions
Topping
In a small mixing bowl, mix together the butter, flour, sugar cinnamon and nutmeg until the mixture looks like crumbs. Set the mixture aside.
The Cake
In a mixing pitcher, mix the flour, baking powder and salt, stir well and set aside.
In an electric mixing bowl, add the butter,shortening and sugar and then beat until completely creamed and smooth.
One at a time add the eggs and vanilla then continue to beat the mixture.
Alternate pouring in the flour mixture and the half & half until all the ingredients are in the mixture.
Pour the batter into a 12 inch iron skillet.
Sprinkle the topping mixing over the top of the batter.
Garnish the topping with sliced strawberries
Bake in a 350 degree oven for 55 minutes or until the center will test clean.
Let cool for 10 minutes before slicing.
Garnish with fresh berries and whipped topping or whipped cream.
