Sausage-Potato Brunch Casserole
We love a great breakfast or brunch casserole to serve a crowd here at the cottage. Our Sausage-Potato Brunch Casserole is one of the recipes that we really enjoy serving our family and friends. I have often times taken this casserole to a covered dish brunch function and everyone always love it. This recipe is filled with a very special flavor with a little kick with lots of potatoes, veggies, cheese and eggs, it is a delicious combination. If we don't have a crowd, I divide the casserole in indiviual servings and freeze them, these indiviual servings are a great grab and go.

Mix The Sausage, Cheese and Veggie's Together
Pour The Mix Into A Baking Dish
Then We Add The Egg Mixture
Then Bake

Sausage-Potato Brunch Casserole

Serves 10 to 12
Ingredients
1(pound) hot ground pork sausage
1(pound) regular ground pork sausage
2 tablespoons olive oil
1 medium onion, chopped
1 green bell pepper, chopped
1 (30 ounce) bag frozen cubed potatoes
2 cups sharp cheddar cheese, shredded
1 teaspoon salt
1 teaspoon pepper
6 large eggs
1 cup half and half
Cooking Spray
Fresh parsley for garnish
Directions
In a large skillet, cook the hot and regular sausage until browned and crumbled, then set aside.
In a separate skillet heat the olive oil then cook the onions, bell pepper and cubed potatoes until the onions are clear and the potatoes are tender.
Place the cooked sausage and the potato mixture into a very large mixing bowl and mix well.
Mix the cheese into the sausage and potato mixture.
With cooking spray, spray a 9X13 baking dish.
Pour the sausage and potato mixture into the sprayed baking dish.
In a mixing pitcher, mix the eggs, salt,pepper plus half and half.
Pour the egg mixture over the sausage and potato mixture, careful to pour in all over the top of the casserole.
Bake in a 350 degree oven for 30 minutes.
Let set for 10 minutes before serving.
