Fruity Pumpkin Bread
My Mother was a fruit cake lover as I think many in that generation were and every time I make this Fruity Pumpkin Bread recipe, I think of her. Isn't it nice to be making a recipe and have a lovely memory of family and that smile comes on your face and into your heart. This is a delicious bread with wonderful dried fruit and nuts, very moist and perfect for dessert or afternoon tea.
How To Make Fruity Pumpkin Bread
We Will Start With A Very Thick Batter
A Blend Of Spice That Creates Perfect
Flavor For The Pumpkin, Fruit & Nuts.
Next We Add Our Wonderful
Dried Fruits and Nuts
Fold In The Goodness.
Divide The Batter Into The Loaf Pans and Bake
Remove From Oven and Let Cool
On A Cooling Rack
Fruity Pumpkin Bread

Ingredients
2-2/3 cups sugar
1 (15 ounce can) pumpkin puree
1 cup vegetable oil
2/3 cup water
4 eggs
1 teaspoon vanilla extract
3-1/2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1teaspoon salt
2 teaspoons ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
2/3 cup dates, chopped
2/3 cup raisins
2/3 cup cranberries
2 cups walnuts, chopped
Baking spray
Directions
In a large mixing bowl, mix together the sugar, pumpkin, oil, water, eggs, and vanilla.
In another large mixing bowl, sift together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves, then mix well.
Gradually add the wet ingredients to the dry ingredients, mixing well until all is incorporated.
Fold in the dates, raisins, cranberries and walnuts.
Spray 2 loaf pans with a baking spray with oil and flour.
Divide the the batter between the two pans.
Bake at 350 degrees for 50 to 60 minutes or until the center will test clean.
Cool on a cooling rack for at least 15 minutes before slicing.
Recipe Tip:
The bread can be frozen for up to 3 months.
