Whats For Dinner Next Week, 12-26-20
Here we are at the end of another year, but this hasn't been just any year. It has been a very hard year for so many folks all over the world. It is a real challenge to make meal plans sometimes when there is so much sickness and the food products have been limited sometimes with empty shelves in the market. We feel very blessed here at the cottage, we keep a stocked pantry and freezer, we grow a lot of our own food, so we did not have the challenge's that so many had. My husband did contract the virus and was sick for the entire month of July, then recovering for the month of August. I have just kept putting our traditional meals on the table, sometimes cutting recipes in half because it has been just the two of us most of the time. We shall be forever grateful that we are finishing this year together and in good health. We are very grateful that you are here today and that you have made it to this point along with us!
SO many delicious meals! I'm hoping for lots of green salads, skinless chicken breasts, and fish-- lighter meals like that for our weekly menu. I feel like I need a bit of a detox after all the sugar and fat we've consumed from Christmas!
ReplyDeleteI was so sorry to hear about your husband contracting the virus. It sounds like he has recovered, although it took awhile, it seems. I hope you and your family have a healthy, happy, and safe new year.
ReplyDeleteThe pecan coffee cake looks a lot like the pecan pie I adapted to make gluten-free. It ended up somewhere in the middle between a cake and pie. Everything looks wonderful, Miz Helen!
