We have had extended COVID restrictions here in Germany and the whole family has been getting a little stir crazy. Today the sun finally made an appearance, which is a rare occurrence this time of year, and I was lucky enough to have already planned a nice hike with a friend! It was lovely to get some fresh air, sunshine, and little venting in. I am always hungry after a hike and this refreshing and easy bruschetta hits the spot!

Ingredients 

(serves 2-4)

  • 2-3 tomatoes 
  • Fresh basil- 2 teaspoons per tomato 
  • Olive oil
  • Balsamic 
  • Garlic
  • Delicious bread of your choosing (baguette would work nicely)
  • Salt and Pepper
Directions 

Cut your bread into individual slices, lightly brush with olive oil and rub with some fresh garlic. Place your bread in the oven on broil at 400 degrees F for a few minutes to toast up. It should take about 5 minutes but keep an eye on it.

While your bread is toasting cut up your tomatoes and basil. You will need about 2 teaspoons of basil per tomato.

Put all your goodies in a bowl and add a drizzle of olive oil, drizzle of balsamic (I like about 2 tablespoons), salt, and pepper to taste. Then mix. Place on top of your freshly toasted bread, and enjoy!
