Chicken and Rice Chow Mein Casserole
When your favorite Chinese restaurant is closed and you think you just have to have some Chinese food, this Chicken and Rice Chow Mein Casserole is a great substitute. I have been making this casserole quiet a bit lately and it sure fills the void of our regular favorite Chinese food restaurant. This is such an easy casserole to put together and I use some of my frozen bagged chicken that I keep in the freezer for Casseroles, Soups and Stews. I shared this casserole with some friend's lately and they loved it!

Chicken Chow Mein Casserole
I Start This Casserole With My Cooked Chicken
I Am Using A Grilled Lemon Chicken That I
Had Bagged and Frozen, It Has A Great Flavor
Next I Will Begin To Put The Vegetables Together
I Just Keep Adding Vegetables and Mixing
Now Its Time To Add The Liquid
Mix It All Together Then Pour It
Into The Baking Dish.
Place A Lid On The Baking Dish Or
Cover It With Foil
Bake Covered Remove From
The Oven And Uncover
Cover With Chow Mein Noodles and ThenBake Uncovered For A Little Longer
Chicken and Rice Chow Mein Casserole
Miz Helen's Kitchen
Serves 8 to 10
Ingredients
3 cups cooked chicken, chopped small
2 cups carrots, shredded
2 cups celery, chopped
2 cups spring green onions, chopped
1 medium sweet red bell pepper, chopped small
2 (4 ounce) jars sliced mushrooms, drained
3/4 cup sliced almonds, toasted
2 cups cooked rice (optional)
1/2 cup pimiento, chopped
2 (10.75 ounce) cans cream of chicken soup
2 tablespoons Soy Sauce
1 teaspoon hot sauce
2 cups Chow Mein Noodles
Directions
In a very large mixing bowl, mix together the chicken, carrots, celery, green onions, sweet red bell pepper, mushrooms and almonds, then mix well.
Add the rice and mix well.
In a small mixing pitcher, mix together the pimiento, chicken soup, Soy Sauce, and hot sauce.
Pour the liquid mixture over the vegetable mixture and mix very very well.
Pour the casserole mixture into a 9 X 13 baking dish, then cover the dish.
Bake in a 350 degree oven for 40 to 45 minutes.
Remove from oven and remove the cover.
Cover the casserole with the Chow Mein Noodles. Place the baking dish un-covered back in the oven and cook for 15 minutes until the noodles are golden brown.
Remove from the oven and let cool for 8 minutes on a cooling rack.
