Brisket Soup
Sometimes in bad weather we can't get out to our smoker or grill so we will make our brisket in the oven. It is delicious but we usually have some left over brisket to slice out for sandwiches or make our Brisket Soup. We started making our Brisket Soup years ago when we had a house full of family and some left over Brisket. As it turns out it was a big hit with the family and we have been making it ever since. This soup has great flavor and is just perfect to serve a crowd for a ballgame day or a family movie night.

We Are Browning Some Onions and Potatoes
Add The Brisket To The Soup Pot
Add The Broth and Some Awesome Mixed Vegetables
Now Let It Simmer Until It Is Ready To Serve
Brisket Soup

Ingredients
2 tablespoons olive oil
3 pounds small white potatoes, skin on, chopped
2 large yellow onions, chopped
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon black pepper
4 cups left over Bar B Que Brisket, chopped
1 (12 ounce) bag of frozen mixed vegetables
3 1/2 cups beef broth
1 cup water
2 tablespoons bar-b-que sauce
2 to 3 dashes of Tabasco Sauce
Directions
In a large heavy stew pot, heat the olive oil then brown the potatoes and onions.
Salt, garlic powder and pepper the potatoes and onions, stir well.
Add the Brisket, mixed vegetables, beef broth, water, bar-b-que sauce and Tabasco Sauce, stir well.
Place the lid on the stew pot and cook on low heat for 45 minutes, until the potatoes are tender. Let simmer until ready to serve.

ReplyDeleteI am so glad to read you all are ok during that horrible anomaly of a storm, You and your beloved look great and its great you are pros at camping. We've been through many hurricanes so I we had the opposite sweating with no air instead of freezing. So sorry you went through all that. This soup is just what you needed to get by once that power came back on. I bought a brisket today, this in on the list it looks fabulous. God Bless and thank the good lord you are all ok. Claudia
