Old Fashioned Banana Pudding
When my Mother would buy a big batch of banana's at the store, I knew that she was about to make her banana pudding. Banana Pudding was one of my Dad's favorite desserts and I have to say my Mothers recipe is one that we have found to be our favorite through the years. This is a from scratch pudding and is thick and rich then we put a mile high meringue on top. This Old Fashioned Banana Pudding recipe is a very special treat for any occasion.
How To MakeOld Fashioned Banana Pudding
This is a very basic custard that will require constant stirring. My vanilla extract is homemade and is a little darker than over the counter brands, so the custard will appear to be a bit darker.
The recipe is a layer of vanilla wafers, then comes the banana's and top with the custard. The layering is repeated until we get to the top of the baking dish.
Layer one for the bananas for the layer process that makes this pudding so delicious.
Next comes a decadent layer of the rich pudding, Just drizzle the pudding on top of the bananas then smooth it out. Then move on to repeat the layers which will bring it to the top of the baking dish.
Ending the layers with bananas and the remainder of the pudding. Then smooth the top of the pudding over the bananas.
Last we layer on the amazing mile high meringue. I love to play with the meringue and make little swirls and curly cues on top, it looks real pretty after it browns in the oven.

Old Fashioned Banana Pudding

Ingredients
Serves 6
1 cup sugar
1/2 cup all-purpose flour
dash salt
2 cups whole milk
5 to 6 bananas, sliced medium
1//2 teaspoon lemon juice
1 (11 ounce) box vanilla wafers
1-1/2 teaspoons vanilla extract
1 tablespoon butter
5 egg yolks
For The Meringue
5 egg whites, room temperature
5 tablespoons sugar
1/4 teaspoon cream of tarter
Directions
In a medium mixing bowl, whisk together the sugar, flour, and salt, then set aside.
Beat the egg yolks well in a mixing pitcher and set aside.
In a mixing pitcher, mix the milk and vanilla and set aside.
Slice the bananas and sprinkle the lemon juice over them to keep them from turning dark, then set aside.
Pour the beaten egg yolks into a heavy sauce pan and stirring constantly bring the heat to medium heat, add the flour mixture to the eggs, alternately with the milk and vanilla stirring constantly.
Bring the mixture to a gentle boil until it begins to thicken, add the butter continuing to stir until it reaches pudding consistency. Remove from the heat immediately and set aside.
Place a layer of vanilla wafers on the bottom of a 8 X 11 baking dish.
Next place a layer of sliced bananas on top of the vanilla wafers.
Now pour 1/3 of the pudding on top of the bananas.
Repeat this process ending up with the bananas and pudding on top.
For The Meringue
Make sure your egg whites are room temperature.
In an electric mixing bowl, beat the egg whites at high speed until they form soft peaks.
Add the cream of tarter and gradually add the sugar a little at a time.
Beat until stiff peaks form.
Spoon the meringue on top of the pudding and swirl to make peaks.
Bake in a 375 degree oven for 12 to 15 minutes, until the peaks are just browned.
Remove the pudding to a cooling rack and allow to completely cool before serving.

Dear Helen, your banana pudding is almost exactly the same as my mama's. My mother did not like meringue so we did without it on banana pudding. ReplyDeleteHow lovely to see an old fashion pudding in all it's glory. I remember my mum use to make us girls bananas and custard for pudding in the 70's and 80's so I had to stop and see what your version was. This blows the socks off mums pudding but she was probably pressed for time bless her. I am going to try this for sure.
