Taco Tuesday Salad With Taco Dressing

Salad Ingredients
6 cups romaine or ice-burg lettuce, chopped
1 pound ground chuck or ground chicken
1/2 package taco seasoning
2 cups Roma Tomatoes, diced
1 cup purple onion, or fresh green onion, chopped fine
2 cups black beans, or pinto beans drained and rinsed
2 cups corn, roasted and cut from cob
1 cup black olives, sliced
2 jalapeno's, sliced
1 cup Cheddar/Monterey Jack Cheese Mix, shredded
1 avocado, sliced
2 limes, for juice
Dress with Taco Dressing or Garden to Table Canned Salsa
Serve Taco Chips with the salad
Directions
Brown the ground chuck or ground chicken in a small hot skillet.
When the product is browned then add the 1/2 package taco seasoning and stir well to completely coat the product.
Arrange the salad ingredients in a large bowl, platter or small bowls, to your liking. I sometimes toss it all together and sometimes arrange it on a large serving platter. More times than not I serve it to my husband and I in large induvial bowls as shown on the post. Drizzle lime juice over the salad before serving. This is a whole meal and sometimes I have left-overs. We love to use some of our Garden to Table homemade Salsa and the Taco Dressing, it is a great combination!

- Directions For Taco Dressing
- Place the mayonnaise or miracle whip and sour cream into a fruit jar or a shaking jar
- Add the milk, close the lid tight and shake until completely blended.
- Remove the lid and add the taco seasoning. Close the lid tight and shake, shake shake until the dressing is completely blended.
- Place the dressing into the refrigerator for at least two hours before serving.
- Keep refrigerated after using.

I love taco salad, and I like your idea of the dressing for it in using the other half of the seasoning packet. This will be perfect for Cinco de Mayo!
