Ham, Spinach, and Potato Quiche
We are enjoying the warmer weather and seeing all the flowers blooming in our village. We have been having a lot of lazy Sunday mornings and this is a family favorite. This is a fun treat for a weekend brunch, or even a weekday breakfast if you prep beforehand. I used leftover ham, but you could also use bacon or sausage.
Ingredients
- 9 inch pie crust (thawed)
- 1 cup of diced potatoes
- 1 cup of cooked ham (could use bacon or sausage as well)
- 2 cups chopped fresh spinach
- 2 tablespoons oil
- 5 large eggs
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese
- salt and pepper
- Fresh rosemary (optional)
Directions
Preheat oven to 350 degrees F. Heat your oil in a pan and put in your diced potatoes. Fry them up on medium heat for about 5 minutes until they get a nice crisp on the outside. While you are cooking the potatoes, put your cheese and ham in your pie crust making even layers. Next put your spinach.
Season you cooked potatoes with salt and pepper and layer on top of your spinach.
Beat your eggs with the heavy cream. Slowly pour mixture into your pie crust. Then sprinkle with some extra cheese on top. You can also add some fresh rosemary if you have it!
Place on a cookie sheet and bake uncovered for 45-50 minutes. Cut and serve warm!
