Egg in a Basket

Egg in a Basket-Lauren@Mizhelenscountrycottage

We had a great Memorial Day weekend! Things are starting to open again here and we took the opportunity to check out an amusement park! Before we left for our weekend getaway we enjoyed this fun and yummy breakfast!

Ingredients (1 serving)

  • Egg
  • Bread (any size)
  • Softened Butter
  • Salt and Pepper
Directions

Start by finding a small circular object to cut holes into your bread, a cookie cutter would be great! I didn't have one so I just used a small ramekin. Once your holes are cut out set them off to the side and butter your bread on both sides, including the cut out pieces.

Heat a pan to medium-high. If you are using a normal sandwich sized piece of bread, you will need to separate your eggs and only use the yolk in the hole otherwise you will have overflow. If you have big enough bread though it should fit great! Place your bread into the pan and let brown for about a minute, then flip. Put your egg into your 'basket' and cook for about 1-2 minutes more, depending on how runny you want them.

Season with salt and pepper! I like to serve mine with bacon. Enjoy!
