We love melon's here at the cottage, watermelon and cantaloupe seem to be our all time favorites. This melon appetizer is such a delicious addition to any gathering or just a light afternoon snack. This is such a simple recipe to put together and is so cool and refreshing. The combination of the melons with the basil is a hit every time and will have your family and friends coming back for more!

I like to start the recipe with ripe watermelon and cantaloupe balls.

Next I add some quartered Baby Bell's Mozzarella

Our next ingredient is the Basil Pesto, mix the melons, cheese, and pesto really well. Cover the mixing bowl with plastic wrap and refrigerate for at least one hour or overnight if you like.

The Balsamic Vinaigrette in made in one of my mini processor, my favorite little kitchen appliance. There is rarely a day goes by I don't use my mini processor. Just put all the ingredients for the vinaigrette into the processor and it is ready to go.

I pour the vinaigrette into a fruit jar and keep it at room temperature until serving.
Last we thread the skewers, I am using a 10 inch wooden skewer. You can use any size you like and thread it with many different variations of pattern. Right before serving just drizzle the vinaigrette over the skewers and garnish with fresh chopped basil. Serve the vinaigrette on the side, This is a delicious appetizer!

Basil Melon Skewers

Basil Melon Skewers

A cool and refreshing appetizer with fresh ripe melons and basil a great flavor combination!

Ingredients

  • 2 cups fresh watermelon, balls
  • 2 cups fresh cantaloupe, balls
  • 1-1/2 cups Baby Bell Mozzarella, quartered
  • 1/3 cup basil pesto
  • Balsamic Vinaigrette
  • 3/4 cup extra virgin olive oil
  • 6 tablespoons balsamic vinegar
  • 2 tablespoons lemon juice
  • 4 tablespoons honey
  • 3 tablespoons fig preserves
  • 1/2 teaspoon salt
  • 24 (10 inch) wooden skewers
  • Garnish with fresh basil, chopped

Instructions

  1. In a large mixing bowl toss together the watermelon and cantaloupe ball, adding the quartered Mozzarella cheese. 
  2. Add the basil pesto and mix well. 
  3. Refrigerate until ready to thread the skewers. Refrigerate at least one hour and its ok to chill overnight.
  4. Prepare the vinaigrette: place all the ingredients into a food processor and puree to liquid. The mixture will become creamy.
  5. Pour into a fruit jar or serving container and keep at room temperature until serving.
  6. I am using a 10 inch wooden skewer to thread my skewers. 
  7. Place your completed skewers on a serving platter and drizzle with the vinaigrette.
  8. Garnish with fresh chopped basil.
