Farm House Brunch Casserole
I have a really sweet neighbor right down the country road, she raises chicken's and she has the most delicious farm fresh eggs. The eggs always have the most beautiful colors and I just love cracking them open to see the bright yellow yolk. Our Farm House Brunch Casserole is perfect for her fresh eggs. This is a very simple but delicious casserole and you can bake it right away, no waiting necessary. The flavor of sausage, hash browns and a few seasons make this a delicious brunch casserole that will please all your family and guest. How To Make
Farm House Brunch Casserole
In a 9 X 11 baking dish layer frozen hash browns with onions and peppers.
In a medium skillet brown the sausage and drain the sausage on a paper towel.
Layer the browned and drained sausage on top of the frozen hash browns.
Next we will whip the fresh farm eggs from my neighbor.
Add the milk to the beaten eggs, then add the cheese to the top of the sausage.
Very carefully pour the egg and milk mixture over the casserole.
Bake at 350 degrees for 40 minutes or until set in the center.
Let Set 10 minutes before serving.

Farm House Brunch Casserole
This casserole is so easy to put together and no waiting, it can be baked right away. Potatoes, sausage, farm fresh eggs make a delicious casserole.
Ingredients
- Cooking Oil Spray
- 3 cups frozen hash browns with onions & peppers
- 1 pound breakfast sausage, cooked and drained
- 4 eggs, beaten
- 1-1/2 cup milk or half and half
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup sharp cheddar and Monterey Jack Mixed Cheese, shredded
Instructions
- Spray a 9 X 11 baking dish with cooking oil.
- Layer the frozen hash browns with onions and peppers on the bottom of the baking dish.
- In a medium skillet cook the breakfast sausage, then drain it on a paper towel.
- In mixing pitcher, whisk the eggs and milk or half and half together. Whisk in the salt and pepper.
- Spread the cooked and drained sausage on top of the hash-browns.
- Sprinkle the cheese mix on top of the sausage.
- Carefully pour the eggs and milk mixture over the top of the casserole.
- Bake at 350 degrees for 40 minutes or until set in the center.
- Let cool for 10 minutes before serving.
