Pineapple Banana Freeze Dessert
Pineapple Banana Freeze Dessert is a cold refreshing dessert for any hot summer day. This 5 star dessert is created with only 3 ingredients and a little garnish, so easy to make and has become a hit here at the cottage. I have been keeping some of this recipe in my freezer to serve unexpected guest or just to have as a very special afternoon treat, it is a winner!

Starting the dessert with fresh pineapple, cut down the center and scored with a knife.
Scoop the pineapple chunks out of the pineapple into a bowl and
set aside.
Next peel the bananas and chop them into 3 inch chunks, then set aside.
Place wax paper on the bottom of a sheet pan, then place the pineapple chunks and the banana chunks onto the wax paper.
Cover the pineapple and bananas with a sheet of wax paper and place the sheet pan into the freezer for at least 4 hours or overnight.
After the pineapple and bananas have been frozen solid
remove them from the freezer.
Load the food processor with the frozen
pineapple and banana chunks.
Begin to pulse the food processor until the mixture is blended well. Add the yogurt and continue to pulse.
Continue to pulse until the mixture is completely blended and smooth. This will take between 4 to 6 minutes.
Just garnish with a little whipped cream and some mint.

Ingredients
- 1 medium size fresh pineapple
- 2 banana's
- 10 ounces coconut Greek yogurt
- Garnish
- whipped topping and mint
Instructions
- Slice the pineapple down the center, then score the pineapple with a very sharp knife. Cut around the edge of the pineapple to the center.
- Lift the pineapple chunks out of the pineapple, place them into a bowl and set aside.
- Peel the banana's and chop them into 3 inch chunks.
- Place a sheet of wax paper over the bottom of a sheet pan.
- Place the pineapple and banana chunks on top of the wax paper on the sheet pan.
- Cover the sheet pan with a sheet of wax paper.
- Place the sheet pan into the freezer for at least 4 hours or overnight.
- Place the frozen fruit into the bowl of a food processor.
- Pulse until the mixture begins to form a thick paste and the mixture is completely blended.
- Add the yogurt a little at a time until it is completely incorporated, and the mixture is beginning to become smooth.
- Stop the processor from time to time to scrap the sides. After the yogurt has been added, drizzle a little water, (no more than 1/2 cup), into the processor to bring the mixture to the desired consistency, which will be a firm soft serve.
- Scoop the mixture into your serving dishes and garnish with whipped topping and mint.
