Mexican Rice Salad
Our Mexican Rice Salad is a very popular salad here at the cottage. This is a very easy salad to put together and serves as a side salad or a dip. This salad is a combination of rice, vegetables and a very delicious salsa, a perfect balance of flavor. This is a great side for a family dinner, a covered dish luncheon or get together with friends and family.

How To Make
Mexican Rice Salad
In a large mixing bowl assemble the rice, tomatoes, bell peppers,
green onions, and jalapenos.
Stir together the rice and vegetables until completely mixed.
Season and add the salsa.
Mix together and let chill before serving.

Mexican Rice Salad
Mexican Rice Salad, a great side salad or can be used as a dip. This is a very flavorful salad with delicious Tex-Mex flavors.
Ingredients
- 3 cups cooked rice
- 1 small bell pepper, chopped fine
- 2 cups Roma tomatoes, chopped
- 8 small green onions with tops, chopped
- 1 small jalapeno (with seeds, optional)
- 1 teaspoon salt
- 1 teaspoon garlic salt
- 1 teaspoon pepper
- 2 teaspoons cilantro (optional)
- 2 tablespoons lime juice
- 1 cup salsa
Instructions
- In a large mixing bowl, mix together the cooked rice, bell pepper, tomatoes, green onions, and jalapeno.
- Mix in the salt, garlic salt, pepper and cilantro.
- Stir in the lime juice and the salsa.
- Chill in the refrigerator for 45 minutes before serving.
This salad is full of awesome Tex-Mex flavors.
