Pig Pickin' Cake
A Pig Pickin' Cake is a southern tradition at a bar-b-que, especially a pig pickin' bar-b-que. Just about every southern family has their own version of the cake and we are no different. This is our version of the classic cake, that my husband refers to as the mandarin orange cake, because he loves mandarin oranges! This is a very easy cake to put together and we have never had any left overs, so I couldn't tell you what to do with those. No matter if it is a bar-b-que or fried chicken on a Sunday, this is a delicious cake anytime!

How To Make
Pig Pickin' Cake
We will start this recipe by draining the mandarin oranges
and saving some of the juice.
Next we mix the very simple cake batter.
While the cake is baking, and cooling
make the frosting, it is a dessert all by itself!
When the cake has cooled you may move it to a serving dish if you like and then frost it with the chilled frosting.

Pig Picken' Cake
A classic Pig Picken' Cake usually served with a southern bar-b-que. Real easy to make and delicious to eat!
Ingredients
- 1 (18.25 ounce) package yellow cake mix.
- 1/3 cup vegetable oil.
- 1/3 cup reserved mandarin orange juice.
- 3 large eggs
- 1 (11 ounce) can mandarin oranges, drained, juice reserved.
- Baking spray for the baking pan
- Frosting
- 1 (15 ounce) can crushed pineapple, undrained.
- 1 (3.4 ounce) package instant vanilla pudding mix.
- 1 (12 ounce) container whipped topping
- 1 cup pecans, chopped
Instructions
- In an electric mixing bowl place the cake mix, vegetable oil, mandarin orange juice, and eggs.
- Beat on medium speed about 3 to 4 minutes, scrapping the sides, until completely smooth and blended.
- Stir in the drained mandarin oranges.
- Spray a 9X13 baking pan
- Pour the batter into the prepared baking pan.
- Bake at 350 degrees for 25 minutes.
- Remove the baking dish from the oven and let cool on a cooling rack until completely cool.
- Turn the cake onto a serving platter it you desire.
- For The Frosting
- Pour the crushed pineapple with the juice into a large mixing bowl, then stir in the vanilla pudding and whipped topping. Stir until completely blended.
- Fold in the pecans.
- Chill in the refrigerator for 1 hour before frosting.
- Frost the cake and keep it refrigerated before and after serving.
- Option:
- Garnish with mandarin oranges
