Southern Sweet Corn Pudding
I remember having sweet corn pudding when I would visit my Grandmothers house in the summer. My Grandmother, Mother and several Aunts would gather on the back porch at my Grandmothers farm house and shuck corn from the garden and sometimes from the field. There were many corn recipes that I remember my Grandmother using for the corn, but one of my favorites was the sweet corn pudding. It is a nice sweet custard with corn kernels nestled inside the cloudy custard. It has a very special flavor that only the corn can give it and a very special dessert! The recipe that I am using today has been adapted from my Grandmothers original recipe.

The Recipe Is Started With Fresh Corn
I Like To Us Fresh Corn Cut Off The Cob
Place The Eggs, Half & Half, Sugar, Butter, Flour, Baking Power and Salt Into The Blender and Blend Until Perfectly Smooth.
There Will Be Nice Little Bites Of
The Corn Through Out The Pudding.
At The End Of The Blend Add Some Seasons.
Pour Into A Well Buttered Baking Dish and Bake
Let Cool For At Least 10 Minutes Before Serving!

Southern Sweet Corn Pudding
A Southern recipe for a corn flavored fluffy dessert pudding. This family favorite recipe has been passed down for generations.
Ingredients
- 4 cups whole kernel corn
- 4 eggs
- 1-1/2 cups half & half
- 8 tablespoons sugar
- 1/4 cup butter, room temperature
- 2-1/2 tablespoons all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 tablespoons butter for buttering baking dish
- 1 teaspoon cinnamon
- dash nutmeg
- Whipped Topping for garnish
Instructions
- Generously butter a 8X8 baking dish and set aside
- Place the corn kernels, eggs, half & half, sugar, butter, flour, baking powder, and salt into a blender. Blend until smooth.
- Add the cinnamon and dash of nutmeg and pulse the blender a couple of times.
- Pour the batter into the buttered baking dish and bake in a 350 degrees for 40 to 45 minutes.
- Remove to a cooling rack and cool for at least 10 minutes before serving.
- Garnish with whipped topping .
