Our Zucchini Garden Casserole With Sausage recipe is a delicious garden to table dish that will please your family and friends every time you serve it. This is a meal in one dish, just add a salad and dessert and everyone will be happy. I love having a casserole that can go to a family dinner table or a covered dish and this is one of those casseroles. Filled with fresh garden vegetables then we add some sausage and top it with some awesome herb seasoned bread crumbs mix. We love this casserole and sure hope you will to.

How To Make Zucchini Garden Casserole
With Sausage
We will start this recipe by browning
the sausage in a large skillet. Remove the sausage to
a holding plate and set aside.
Add the chopped Zucchini and onions to the skillet with the sausage drippings. Sauté the squash and onions until tender.
Add the sausage back into the skillet and
mix with the sautéed vegetables.
Add the wet ingredients and mix well.
Mix The wet ingredients very well with the vegetables, then place the lid on the skillet and
let simmer until the baking dish is prepared.
Line the baking dish with the herb seasoned stuffing mix.
Very carefully add the vegetable mixture to the
top of the herb seasoned stuffing mix.
Last layer the remainder of the herb seasoned stuffing mix on top of the vegetable mix, then drizzle with melted butter.
Bake in the oven and then serve hot!

Zucchini Garden Casserole With Sausage
A delicious garden to table casserole with sausage and a crunchy top, loaded with flavor. A very easy casserole that will please your family.
Ingredients
- 1 pound breakfast sausage, browned
- 3 medium size zucchini, halved & chopped
- 1 large yellow onion, chopped
- 1 (10.75 ounce) can cream of chicken soup
- 1 (8 ounce) carton sour cream
- 4 cups herb-seasoned stuffing mix
- 3/4 cup chicken broth
- 4 tablespoons butter
Instructions
- In a large skillet brown the breakfast sausage, remove to a holding platter and set aside.
- In the same skillet with the sausage drippings add the chopped zucchini and onions. Sauté the vegetables until tender.
- Add the browned sausage into the vegetable mix, place the lid on the skillet and let the mixture simmer.
- In a medium mixing bowl mix the chicken soup and the sour cream together until blended well.
- Add the soup mixture into the vegetable and sausage mixture, and mix well until it is blended well. Place the lid on the mixture and let it simmer, while you prepare the stuffing mix and the baking dish.
- In a large mixing bowl pour the seasoned herb stuffing mix in the bowl and then moisten with the chicken broth. Mix very well.
- With 1 tablespoon of the butter, butter a 9X13 baking dish.
- Very carefully sprinkle one-half of the stuffing mix on the bottom of the buttered baking dish.
- Very carefully add the vegetable mixture on top of the stuffing mix.
- Last layer the remainder of the stuffing mix on top of the vegetable mixture.
- Melt the remaining 3 tablespoons of butter and drizzle it on top of the stuffing mix.
- Bake covered at 350 degrees for 15 minutes. Uncover and bake for 25 to 30 minutes or until the top is a golden brown.
- Serve hot.
This is a delightful casserole with crunchy top and lots of flavor!
