Green Chile Chicken Tortilla Casserole is a favorite go to recipe. We really enjoy our Tex-Mex cuisine here at the cottage. This is one of those casseroles that can go the covered dish pot lucks and you will bring an empty dish home. This is a simple recipe that is so easy to put together and it has all the Tex-Mex flavor that will bring you back to this recipe over and over again.

This recipe has layer and layer of Tex- Mex flavor!
I start the recipe by mixing the green chilies,
tomatoes mixed with green chilies, and the soup.
Now we start the layers, first layer is
corn tortilla strips laid in the bottom of the baking dish.
Layer 2, sprinkle the chicken over the top of the tortilla strips.
Layer 3, spread the soup and green Chile mix over the chicken.
Layer 4, Sprinkle the cheese over the top of the Chile & soup mix.
Layer 5, and we repeat the layers.
Lay tortilla strips on top of the cheese.
Layer 6, sprinkle the remaining chicken on top of the tortilla strips.
Layer 7, spread the remaining
soup & Chile mix on top of the chicken.
Layer 8, sprinkle some small tortilla chips on top of the soup & Chile mix Then sprinkle cheese on top of the chips.
Place a lid on the baking dish and Bake.

Green Chile Chicken Tortilla Casserole
This recipe is layers of Tex-Mex flavors, a real simple and delicious casserole. Great for pot luck dinners and freezes well.
Ingredients
- 12 (6 inch) corn tortillas, cut into wide strips
- 4 cups cooked chicken, chopped
- 2 (10.75 ounce) cans cream of chicken soup
- 1 (10 ounce) can tomatoes with green Chiles.
- 3 cups chopped green Chiles.
- 3 cups Sharp Cheddar Cheese, shredded
- Garnish
- Fresh cilantro and fresh green onions, chopped.
Instructions
- Cover the bottom of a 9 X 13 baking dish with tortilla strips.
- Layer 1/2 of the chopped cooked chicken on top of the tortilla strips.
- In a mixing pitcher mix the green Chilies, soup, and tomatoes with chilies.
- Spoon 1/2 of the soup mixture over the top of the chicken.
- Sprinkle 1/2 of the cheese on top of the soup mix.
- Repeat the layers.
- Cut some of the left over strips into chips and place on top of the last soup mixture and finish with the remaining cheese.
- Bake at 350 degrees for 40 minutes. Uncover and cook for 5 more minutes.
- Remove from the oven and garnish with fresh cilantro and chopped fresh green onions.

I have a very old Cooking Light recipe very similar to this. Mine adds a layer of canned black beans with chopped scallions scattered around. I had forgotten about it but this reminded me! Thank you! Dinner tonight.
