Sheet Pan Sausage and Veggies
I recently started working again after spending the last year at home. It has been very exciting, but also a big adjustment for us. I forgot how crazy it can be to juggle everything at once! So easy dinners have been the go-to. This sheet pan dinner is easy, fast, and you get some great leftovers. Hope this recipe can give you an easy night this week!
- 1 rope sausage (like hillshire farms or johnsonville) whatever kind you prefer
- 3 bell peppers
- 1 red onion
- 3 cloves of garlic (sliced or minced)
- 10 oz cherry tomatoes
- 1 tablespoon oregano
- 1 tablespoon olive oil
- Salt and pepper
- White rice to serve over
Directions
Preheat oven to 400 degrees F. Slice your sausage into equal size pieces, about 1/4 of an inch.
Slice your bell peppers and onion thinly. Leave cherry tomatoes whole. Put everything together in a nice big bowl.
Add your olive oil, oregano, garlic, salt, and pepper to the bowl and mix. Then add your sliced sausage and mix again. Spread everything out evenly on a foil lined baking sheet.
While that is in the oven you can start your rice. Leave in the oven for 40-45 minutes. Stir a bit after 20 minutes.

I make a very similar sheet pan sausage meal but I leave out the tomatoes and Italian seasonings and sub in a bag of frozen pierogi. I just seasoning with salt substitute and cracked pepper. (No need to boil the pierogi just be sure that its tossed in the oil before in goes in the oven. SOMETIMES I turn the pierogis and sausage slices 1/2 way thru (depends on how busy I am with other evening tasks!)

ReplyDeleteI made your exact recipe except I used the air fryer instead of the oven because some of our heating elements are burned out or something. I don't even know. Anyway, it came out perfect in the air fryer and deeeeeeeeeeeeeelicious!
