Balsamic Pears & Chicken
Balsamic Pears & Chicken on the table tonight, thanks to my friend who brought me a large basket of beautiful pears. I love pear season and all the wonderful recipes that I use pears in. The balsamic pears are a wonderful pairing for the chicken and it makes a delicious and very flavorful sauce for the chicken. This is a very simple recipe with a few herbs and some cranberries to enhance the flavors. This is a perfect recipe for pear season and will make a very special entre for any occasion.

I start this recipe with some beautiful fresh pears!
The pears will not be peeled, just washed and sliced.
We will brown the seasoned chicken in a large skillet.
When the chicken has been removed from the skillet, then we will
pour in the balsamic sauce mix and the sliced pears.
After the pears are just tender and the sauce has come together,
place the chicken back into the skillet and
cook until the chicken reaches 165 degrees and is heated through.
Serve hot with rice.

Balsamic Pears & Chicken
A flavorful balsamic sauce to pair with pears, cranberries and chicken, for a delicious recipe.
Ingredients
- 4 chicken breast, skinless, boneless
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 teaspoon's dried thyme
- 2 teaspoons fresh rosemary, chopped
- For The Balsamic Sauce
- 2 tablespoons butter
- 2 cups chicken broth
- 3 tablespoons balsamic vinegar
- 1 teaspoon fresh rosemary, chopped
- 2 teaspoons sugar
- 1-1/2 tablespoon cornstarch
- 2 large pears, each cut into wedges
- 1 cup dried cranberries
- Garnish
- Fresh Rosemary Sprigs
Instructions
- Wash and dry the 4 chicken breast.
- In a small bowl mix the salt, pepper, thyme and fresh rosemary for the chicken.
- Sprinkle the salt mixture over the chicken.
- Pour the olive oil into a large hot deep skillet. Place the seasoned chicken breast into the hot oil and brown the chicken, cook on medium heat about 10 minutes, or until the chicken reaches 165 degrees.
- Remove the cooked chicken to a holding plate.
- In a mixing pitcher, mix the chicken broth, balsamic, fresh rosemary, sugar and cornstarch. Mix until completely blended.
- Place the butter into the hot skillet and melt it.
- When the butter is melted, pour in the balsamic mixture.
- Stir in the dried cranberries and then place the pear wedges into the mixture. Cook the pears in the mixture just until they are starting to get tender and the sauce is starting to thicken.
- Place the cooked chicken into the pear and balsamic mixture and cook on medium heat until the chicken is heated through and maintains a temperature of 165 degrees.
- Serve hot over rice with fresh rosemary garnish.

I love that this beautiful recipe is full of fall flavors, but it is not using your typical fruits/veggies of the season. I need to try this because my husband loves combination of sweet and savory.
