Frosted Pumpkin Walnut Snack Cake
I love this simple recipe that is so full of delicious flavors. This Frosted Pumpkin Walnut Snack Cake has been around our family for a very long time and is just perfect for a after school snack for the kids or a great little snack cake to serve your friends that drop by for coffee. We have lots of friends and family that drop by the cottage for a cup of coffee and a nice visit, I really enjoy having a little something to offer along with that cup of coffee or tea. This recipe is easy to put together and has a great spice combination to enhance the flavor of the pumpkin and is topped with a silky frosting with walnuts.

How To Make
Frosted Pumpkin Walnut Snack Cake
In a medium mixing bowl, stir together the dry ingredients.
In an electric mixer mix the wet ingredients and
very slowly add the dry ingredients.
Pour The Batter Into A Prepared 9 X 9 Baking Dish.
After Baking Place On A Cooling Rack and Cool Before Frosting
Mix All The Frosting Ingredients In a Mixing Bowl.
Frost The Cooled Cake and Garnish With Walnuts

Frosted Pumpkin Walnut Snack Cake
This snack cake is easy to put together and perfect for after school treats or serve friends and family for a small gathering. Delicious pumpkin flavor!
Ingredients
- 2 cups flour
- 1 cup sugar
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 eggs
- 1/2 cup oil
- 1 teaspoon vanilla
- 1 (15 ounce) can pumpkin
- 1-1/2 cups walnuts, chopped- divided
- For The Frosting
- 1 (8 ounce) block cream cheese, softened
- 6 tablespoon butter, softened
- 2 teaspoons milk
- 1 teaspoon vanilla
- 2 cups confectioners sugar
- Baking spray for the baking dish
Instructions
- In a medium mixing bowl, stir together the flour, sugar, ground ginger, ground cinnamon ground cloves. salt, baking powder and soda.
- In an electric mixing bowl mix together the eggs, oil and vanilla until the eggs are beaten.
- Add the pumpkin and mix until it completed blended with the egg mixture.
- With the mixer running, slowly add the dry ingredients that have been mixed together. Mix for 1 minute.
- Stir in 1/2 chopped walnuts.
- Pour the thick batter into a 9 X 9 sprayed baking dish.
- Bake at 350 degrees for 30 minutes or until the center test done.
- After baking, place on a cooling rack and allow to cool completely before frosting.
- For The Frosting
- Place the soften cream cheese and butter into a mixing bowl and with a hand mixer mix the cheese and butter until completely blended and smooth.
- Add the milk and vanilla and mix together until blended.
- Slowly add the powdered sugar.
- Frost the cake and garnish with the remaining walnuts.

ReplyDeleteThere isn't a star system here for rating, however, if there were such a system I would give this recipe 5 stars! This is a lovely, tasty, quick and flavorful and very moist snack cake. The cream cheese frosting is very good also. I'm grateful for your recipe which will be repeated in our home.
