Turkey Noodle Soup
Our Turkey Noodle Soup is one of those recipes that makes me feel good just thinking about it. A great place to go with some of the turkey left overs that is so comforting for just relaxing after being in the kitchen for days. Just put these ingredients in a big soup pot to simmer, kick back and enjoy some rest time. Dip this up in a nice soup cup and the first bite is worth the wait! The soup has a great balance of turkey, broth, and seasons and can be enjoyed anytime of the year !

How To Make Turkey Noodle Soup
I like to sauté the carrots, celery and onion in
some olive oil and butter.
I have some nice rich broth prepared from some of the turkey drippings and some turkey broth or you can use chicken broth. I like to add some butter to this broth to enhance the flavor.
Next I will add the turkey and the sautéed vegetables, making sure to stir after each addition.
At that point I add the seasons and stir well.
Last I will add the noodles,
and cook on medium heat until it comes to boil.
At that point I put the lid on the soup pot and bring it down to
simmer until the noodles are soft about 1 hour.
Just give the soup a little fresh parsley garnish and
it will be ready for serving.

Turkey Noodle Soup
Our soup recipe is a pot of flavor and pure comfort. A combination of left over turkey or chicken with the addition of fresh vegetables in a delicious broth.
Ingredients
- 4 cups roasted or baked turkey or chicken, chopped
- 2 tablespoons olive oil
- 3 tablespoons butter
- 2 cups carrots, chopped small
- 2 cups celery chopped medium
- 2 yellow onions, chopped medium
- 1 clove garlic, minced
- 8 cups turkey or chicken broth
- 2 teaspoons thyme
- 1 teaspoon poultry seasoning
- 1 teaspoon salt (to taste)
- 1 teaspoon pepper
- 1 (12 ounce) package Reames Homestyle Noodles
- Fresh Parsley for garnish
Instructions
- In a large heavy skillet sauté the carrots, celery, onions, and minced garlic in the olive oil and butter. When the carrots are soft and the onions clear, remove from the heat and set aside.
- In a very large soup pot pour in the turkey or chicken broth and the chopped roasted or baked turkey or chicken. Heat to medium temperature, just under a boil.
- Add the sautéed carrots, celery, onions and garlic, stir well.
- Add the thyme, poultry seasoning, salt and pepper, stir well.
- Add the Homestyle Noodles and stir well. Bring the soup mix just to a boil. Place the lid on the soup and reduce the heat to simmer. Stir at 15 minute intervals until the noodles are soft. Replace the lid and simmer about 1 hour.
- Garnish with fresh parsley before serving.
Notes:
This recipe can be frozen for 3 months. Can be kept in the refrigerator for up to 3 days without freezing. This is a great gift for friends, just put it in a fruit jar, add a ribbon with a spoon and your friend will love it!
