Cranberry Pie With Marshmallow Topping
Cranberry Pie with Marshmallow Topping is a great holiday recipe that our family really enjoys. The recipe is so easy to put together with some warm cozy spices and topping it off with a creamy topping. This is a great pie for a special dinner or a pot luck dinner, it can be causal or elegant. The flavors are unexpected so make sure you have enough slices because they will come back for seconds!

How To Make Cranberry Pie With Marshmallow Topping
I start this pie with fresh cranberries and some nice warm spices.
Cook the cranberry mix until the cranberries have popped
and the mix becomes thicker. Then simmer for a bit.
Let the cranberry mix cool before placing it in the pie shell.
My daughter Robbin, was in the kitchen today helping with the baking and preparing the pie shell for me.

Pour the cooled cranberry mixture into the pie shell.
Remove the pie from the oven to a cooling rack.
Then refrigerate for at least 2 hours.
Mix the marshmallow topping after the pie is
completely cooled to room temperature and refrigerated.
Whip the topping until completely smooth.
Remove the pie from the refrigerator
before frosting.
Frost with the marshmallow topping and
sprinkle the walnuts on top.

Cranberry Pie With Marshmallow Topping
The combination of the cranberry pie filling with the marshmallow topping is delicious. Topped with a few walnuts makes this a very special pie!
Ingredients
- 24 ounces fresh cranberries
- 1 cup sugar
- 1 cup orange juice
- 2 teaspoons ground cinnamon
- 1-1/2 teaspoon ground ginger
- 1/2 teaspoon ground cloves
- pinch salt
- 1 teaspoon butter, soften
- 1 nine inch pie crust
- 1 (8 ounce) container whipped topping
- 1 (7 ounce) jar marshmallow fluff
- 1/2 cup walnuts, chopped
Instructions
- The Filling
- Wash the cranberries, then place them in a 5 quart sauce pan.
- Add the sugar, ground cinnamon, ground ginger, ground cloves, and salt. Stir well.
- Add the orange juice and stir well.
- Place the sauce pan over medium heat stirring constantly. Heat the mixture until the cranberries begin to pop. Lower the heat to low and continue stirring until most of the cranberries have popped and mixture begins to thicken.
- Lower the heat to simmer and simmer for 15 minutes.
- Add the butter and stir well.
- Allow the mixture to cool to a cool room temperature.
- Place your pie crust into a 9 inch pie plate.
- Pour the cooled cranberry mixture into the pie crust and bake at 375 degrees for 30 minutes.
- Remove the pie to a cooling rack, cool to room temperature.
- Refrigerate for at least 2 hours.
- For The Frosting
- In a large mixing bowl, whip together the whipped topping and the marshmallow fluff until completely smooth.
- Remove the pie from the refrigerator and frost with the marshmallow frosting.
- Sprinkle with the walnuts.
- Keep in the refrigerator before and after serving.
This pie looks so good, and it is ready for the family.

ReplyDeleteI made this today and followed the recipe exactly...except I forgot to add the butter!...and it was SO easy to make and REALLY delicious!!!! And my cat was CRYING her head off for the marshmallow topping. I had to give her a little taste and she wanted the whole bowl. lol
