Roasted Vegetable & Sausage Mac N Cheese Casserole
This is one of those casserole's that is truly a one dish meal. Just add a nice green tossed salad and some garlic bread to this casserole and you have a wonderful meal to serve your friends and family. This recipe is a combination of sausage, butternut squash, brussels sprouts, red onions in a special dressing then roasted. I guess you could just stop and serve right there, but I added a delicious mac n cheese and topped it with some buttery bread crumbs. If you should have any left, you can freeze for 3 months.

Roasted Vegetable & Sausage Mac N Cheese Casserole
We are starting this casserole with a mix of
fresh butternut squash, brussels sprouts, red onions and Kielbasa sausage.
Mix the seasons with a special dressing.
Pour on a sheet pan and roast in the oven.
When roasting time is complete, remove from oven and set aside.
Next we make a thick and delicious cheese sauce.
Add cooked elbow macaroni to the cheese sauce.
Pour the roasted vegetable, sausage, mac n cheese mixture
into a 9 X 13 baking dish.
Cover the mixture with buttery bread crumbs.
Bake in the oven until golden brown on top
and the center is bubbling.

Roasted Vegetable & Sausage Mac N Cheese Casserole
A comforting one dish meal, with creamy mac n cheese mixed with seasoned roasted vegetables. A great meal for friends and family!
Ingredients
- 2 cups Butternut Squash, peeled & diced
- 3 cups Brussels Sprouts, sliced in half
- 2 large red onion's, large slice
- 10 ounces Kielbasa sausage, diagonal sliced
- Dressing
- 1 teaspoon salt
- 1 teaspoon ground pepper
- 1 teaspoon garlic salt
- 1 teaspoon dried thyme leaves
- 3/4 cup light brown sugar
- 6 tablespoons red wine vinegar
- 1/2 cup olive oil
- Cheese Sauce
- 1/4 cup all-purpose flour
- 2 cups vegetable broth
- 1 cup evaporated milk
- 1-1/2 cups sharp cheddar cheese, shredded
- 1 (12 ounce) package large elbow macaroni, cooked
- Topping
- 1/2 cup bread crumbs
- 1/4 cup parmesan, grated
- 1 teaspoon fresh parsley, chopped fine
- 1/2 teaspoon dried thyme leaves
- 4 tablespoons butter, melted
- 1 tablespoon butter, for buttering the baking dish
Instructions
- Mix the vegetables and sausage in a very large mixing bowl.
- Add the salt, pepper, garlic salt, thyme leaves, brown sugar and red wine vinegar, and mix very well.
- Place the seasoned vegetables and sausage on a sheet pan.
- Roast the vegetables in the oven at 425 degrees for 25 minutes.
- Cook the macaroni according to package directions and set aside.
- In a small mixing bowl mix the bread crumbs, parmesan, parsley, thyme and melted butter. mix well with a fork.
- In a medium sauce pan, over medium heat, mix the flour, vegetable broth and milk. Stir together until the mixture is creamy and thick. Remove from heat and add the cooked macaroni. Mix well until the macaroni is completely covered with the cheese sauce.
- Pour the mac n cheese mixture into a large mixing bowl with the roasted vegetables and mix well.
- Pour the casserole mixture into a buttered 9 X 13 casserole baking dish.
- Top the casserole with the buttered bread crumbs.
- Bake in a 375 degree oven for 30 minutes or until the bread crumbs are golden brown and the center is bubbly.
- Remove from the oven to a cooling rack, let set for 10 minutes before serving.
This delicious casserole is ready to serve!
